Kale, Spinach, Swiss Chard, Collard, Endive and others greens offer us a variety of chorophyll rich foods that are rich in antioxidants and provide fiber to our diet for better digestion and improved colon health. Many of these foods are noted cancer fighting champions with high ORAC values.
So, how do you eat greens? You can eat greens raw in salads or steam them and eat with a little butter, salt, pepper and a dash of vinegar. You can chop them and add them to soups and stews. My favorite way to eat greens is to give them an Asian flare. It only takes a minute.
Wash the greens and chop them into uniform smallish pieces. Heat a cast iron skillet with a little olive oil (1 - Tbs. or so) and then add about a teaspoon or cumin, coriander and tumeric to the hot oil. Toss the spices in the oil and then immediately add and toss the chopped wet greens (one good bunch of greens is perfect). Add a splash more water (if needed) put the lid on the skillet and remove it from the burner. Let the greens steam inside the skillet for just a minute, toss again and serve…. yummy!! Add salt and pepper to taste.
